OUR PIZZA DOUGHItalian premium quality flour, the best on a worldwide scale, processed with long leavening procedure. We go through this process, on low temperature, allowing for a perfect maturity of the gluten, so as to allow a quick digestion of our dough. Our pizzas are made following the traditional Neapolitan recipe and kneaded by hand using Neapolitan techniques. The sensation of crispy, wood-baked dough mixed with hot tomato and fresh mozzarella melting away with each bite, is an ecstasy of the senses.
